1/2 cup sooji
4 tbsp ghee (clarified butter)- use 1 tbsp ghee at the end
1/4 cup cashew & raisin mix
1 1/2 cup milk
1 cup sugar
1/2 tsp cardamom powder
Heat 3 tbsp of ghee in a pan on medium flame. roast cashew-raisins. Once raisins are puffed, remove & keep aside. Now add sooji and roast till it changes color.
Add milk and stir continuously till it becomes thick. Now its time to add sugar. Again stir till continuously avoiding lumps. Once it starts leaving sides and does not stick to pan, sooji halvo is done. now add cashew rasins, cardamom powder, 1 tb of ghee and mix it. Turn off the stove.
Sooji halvo is ready to serve…Enjoy!
