14 oz. (400 gm) small size (~ 1/4 inch) cut green beans (fansi)
1/2 cup finely chopped tomatoes
2 tbsp oil
1/4 tsp mustard seeds
1/2 tsp cumin seeds
a pinch of asafoetida
1/2 tsp turmeric powder
2 tbsp coriander powder
1 tsp crushed green chili peppers ( or to taste)
1/2 tsp red chili powder (or to taste)
salt to taste
Heat the oil in a skillet. Add mustard seeds. Once it starts popping, add cumin seeds, asafoetida, turmeric powder, tomatoes & green chilies. Let it cook for few seconds.
Now add green beans & salt. Mix everything, close the lid & let it cook for some time on medium heat till it starts becoming little soft. Keep mixing in between to avoid sticking to the skillet. When you see it started becoming soft, remove the lid, add coriander powder. Adjust salt & red chili powder to taste. cook for 1-2 minutes without lid so that water evaporates. Turn off the stove, close the lid & let is rest for 1-2 minutes.
Serve it with Roti, Bhakhri, paratha, rice etc..
