Instant Sooji Handvo with Zucchini


Serving: 2-3 people

 

 

 

 

 


Ingredients:

2 cup Sooji (Semolina)
1/2 cup besan flour (Chickpea flour)
1/2 cup grated zucchini
1/2 cup plain yogurt
1-2 tbsp spoon sesame seed
1/2 tbsp penuts
1/2 tsp haldi (turmeric powder)
1/2 tbsp sugar / according to taste
red chili powder according to taste
salt according to taste
lemon juice according to taste
3 tbsp oil
water if needed
1/2 tbsp eno or baking soda

Tempering:
2 tbsp oil
1/2 tbsp mustard seed
1/2 tsp hing (asafoetida)

Method:
Mix all the ingredients (except water & eno) add little water, make the batter of medium thick consistency.
Heat the oil for tempering in small skillet. once the oil is heat up add mustard seed. once mustard seeds splitter, add hing & add it to batter.
Now add eno/baking soda into batter, stir it for few minutes.

Make in pan: cover the with oil (2 tbsp) in pan so that batter does not stick in bottom. once the oil heat up, add the batter , spread it evenly, cover with lid and cook at medium heat for 15 minutes,check if the bottom is crispy, flip it over and cook it for another 15min.. make sure it is cooked perfectly if not cook it for some more time.

Serve with tomato ketchup, green chuteny or spicy yogurt.
