Serving: 3-4 people
1 tbsp oil
1/3 cup packed mint leaves
2-3 curry leaves
4-5 dry red chillies
1 tbsp cumin seeds
1/8 tsp asafoetida
4-5 medium size tomato
salt to taste
Roughly chop tomatoes.
In skillet add oil at medium heat. Once oil get heated add asafoetida, cumin seeds, dry red chillies,curry leaves & mint leaves. Saute for couple of seconds. take out the spice mixture in a bowl & let it cool.
In same skillet at high flame add tomatoes & cook till they become soft. Turn off the stove.
In a blender add spice mixture & 2 spoon of tomatoes & grind them finely. now add rest of the tomatoes grind them roughly. DO NOT ADD ANY WATER.
Take out the chutney in serving bowl. Add salt to taste.
Tomato chutney is ready!!
Serve tomato-mint chutney with Dosa, Idley, Uttapam or any other South Indian meal. It does well even with rice & roti.
Note: Adjust the dry red chillies if you want mild or more spicy.
