Rice Flour Khichu


Rice Flour Khichu is one of the traditional Gujarati dishes. It is perfect for snack, evening light dinner or even in morning breakfast!

Ingredients:
1 cup rice flour
2 1/2 cup water
2 tbsp cumin seeds
2 tbsp salt ( or to taste)
2 tbsp crushed green chilies ( or to taste)
2-3 tbsp chopped cilantro
1/2 tsp Eno / fruit salt
2 tbsp oil
Garnishing: asafoetida , red chili powder, chat masala, oil , red chili powder, chat masala, oil

Method:
In a pot add water, cumin seeds, salt, green chilies, cilantro & bring it to boil at medium flame.
Add Eno to the boiled water. take out half cup water to add it later.
Slowly add rice flour, keep stirring it avoiding lumps. Add remaining water, oil & mix it again. It will be smooth dough looking texture & will not stick to pot due to oil.. Turn off the stove, cover it with lid for 5 min to cook with steam.

Rice Khichu is ready to serve!

Garnish it with a pinch of asafoetida, red chili poweder, chat masala & oil… If you don’t like spicy then you can avoid green chilies & just serve with oil..

It is perfect for snack time, specially in winter or for light dinner…
