Zucchini Rice Muthiya


If you are looking for one pot healthy meal, Zucchini Rice Muthiya is the perfect option.

Serving: 2-3 People

Ingredients for Muthiya:
1 1/2 cup grated zucchini (w/o squeezing water)
1 1/2 cup cooked rice
1 cup wheat flour
Salt to taste
1 tbsp sugar
1/2 tsp asafoetida
2 tsp turmeric powder
1/2 tsp carom seed (ajwain)
2 tsp coriander powder
red chili powder / green chili paste to taste
3 tbsp oil
Some extra oil to roll muthiya
Tempering:
1 tbsp oil
1 tsp mustard seeds
3 tbsp sesame seeds
1/2 tsp asafoetida
4-5 curry leaves
green chilies (optional)
1 tbsp sugar ( avoid / add more as per taste )
2 tsp lemon juice (adjust as per your taste)
Chopped cilantro (optional for garnishing)



Method:
In a large bowl mix all the ingredients for muthiya and make the dough.
Note: There is no water needed as water from zucchini will be enough to knead the dough.

Now, take some oil in palm and make small cylinder roll with same size so that it cooks evenly. Steam for 30 minutes on medium flame. Check in between if you need to fill the water in the steamer. Also, you can keep the steamer open after 20 minutes. After 30 minutes, insert the knife. If it comes out clean, muthiya is cooked. If not, then steam them for extra few minutes. Let it cool down completely before cutting them into pieces.

You can eat muthiya with or without tempering. For tempering, heat up the oil in a wok. Add mustard seeds, sesame seeds, asafoetida, curry leaves, green chilies (optional). Then add muthiya and sugar. Mix everything & saute it for 5 minutes. Garnish it with lemon juice & cilantro and give a final mix. It is ready to serve!

Muthiya can be served with tea, coffee, ketchup, sweet pickle, etc… It’s a perfect meal for lunch, dinner, snack, or even as breakfast! It’s a good option for kid’s school lunch box too!
